This week’s What I Ate Wednesday! Still a preggo edition! We’re about 23 weeks now. So again, not a whole lot has changed with my diet other than I’m snacking more often than I normally would and I’m definitely making more of an effort to get enough protein. Yesterday was a busy day so I didn’t put a ton of thought into my meals as you’ll see below..
I’m still waking up super hungry so I started my day with plain oatmeal cooked with cinnamon and stevia and I stirred in a scoop of collagen powder and added some sliced banana. I just recently starting taking the collagen powder to help with some joint pain and skin elasticity through my ever changing body during pregnancy. There are A LOT of good brands out there, this just happened to be a quick grab so just do your research!
Later on, I got in a long walk with my pup and a 40 minute upper body workout. I snacked on an apple dipped in chocolate vegan Shakeology post workout while I got some more computer work done. Yes, I know..the dip is weird but sometimes I just want to chew my food instead of drink it. I just added a little water and Shakeology to a bowl until I got a thick, pudding-like consistency.
Around 1pm I threw a salad together before running errands with Tyler. This was just butter lettuce, cucumber, red cabbage, onion, 1/2 an avocado, a little bit of tempeh tossed in a dressing of 1 tbs Vegenaise, 1 tbs lemon juice, 2 tbs balsamic vinegar, 2 tbs water, dash garlic powder, and a little lemon pepper seasoning (that probably makes enough for 2 servings).
While we were running around town, I forgot my water so I picked up a Vitamin Water Zero.
Once we got home, I had to finish up some work and snacked on some carrots and hummus with our homemade blueberry kombucha. I’ll be doing a DIY Kombucha video soon 🙂
Dinner was aroun 7pm and was just a simple bowl of spaghetti squash with marinara sauce. Tyler had a lettuce wrapped veggie burger with potatoes but I still can’t stomach veggie burgers. My one preggo food aversion that has lingered.
We curled up with a movie and munched on some olive oil popcorn and I didn’t snap a pic but I had a bite (or 2. Ok, 3) of Tyler’s cashew milk ice cream in the Dark Chocolate Truffle flavor. It’s ridiculously good but does have some added sugar so I try not to indulge too often.
